SHOULDER ROAST:  The upper part of the foreleg, from the shoulder socket to the elbow.
CHUCK ROAST: The beef chuck cut comes from the animal's upper shoulder and lower neck.
SIRLOIN TIP ROAST
: This is cut from the hindquarters, adjacent to the sirloin.
PORK TENDERLOIN: Also known as pork filet, is a thin and long rectangular cut of pork from the loin muscle.
BOTTOM ROUND ROAST
:  A lean cut of meat from the outer rear leg of a calf.
